Agar is a gelatinous substance derived from seaweed and is widely used as a vegetarian alternative to animal based gelatines and for its amazing setting and hold capabilities. Agar is a low calorie ingredient offering a short and breakable texture in the mouth, but used in other products such as ice cream can create a smooth mouth feel. Highly acidic or alkaline bases can affect the gelling ability of agar agar with foods such as citrus, strawberries and passionfruit for example may require higher amounts of agar agar. While other ingredients such as fresh figs, kiwi fruit, mango, paw paws, papaya, pineapple contain enzymes that will break down the gelling capacity of Agar.
